especially interesting when lemon juice is added. The natural pigments in the red cabbage react to changes in acidity, which is why the drink’s color can visibly change.
## Ingredients
For several glasses you will need:
* 1/2 head of red cabbage, roughly chopped
* 1 cup fresh or frozen blueberries
* 2 tablespoons dried hibiscus flowers
* 4–5 cups water
* 1/2 cup freshly squeezed lemon juice
* 3–4 tablespoons honey, to taste.
Alternatively, you can use another suitable sweetener.
To serve:
* Ice cubes
* Fresh lemon slices
* A few mint leaves
## Step 1: Prepare the red cabbage
First, remove the outer leaves of the red cabbage. Then, cut the cabbage into large pieces. It doesn’t need to be cut very finely, as the tough bits will be removed later anyway.
Briefly wash the blueberries under cold water if using fresh berries. Frozen blueberries can be added directly to the pot.
## Step 2: Slowly heat
the ingredients
Place the chopped red cabbage, blueberries, and dried hibiscus flowers in a sufficiently large pot.
Pour in four cups of water. If the ingredients are not sufficiently covered, you can add a little more water.
Slowly bring the mixture to a boil.
Once boiling, reduce the heat significantly. The mixture should then only simmer gently.
Let it steep and simmer for about 15 to 20 minutes.
After just a few minutes, you will notice how the water changes. Red cabbage, blueberries, and hibiscus release their natural pigments, and the liquid gradually takes on an intense dark purple to reddish-purple color.
